Tasting notes:
This wine has a very deep purple color with blackcurrant and red fruit aromas, hints of flowers and spices.
The dark fruits flavors are enhanced by satin-smooth tannins.
Grape variety: 50% Grenache - 40% Syrah - 10% Mourvèdre
Grenache (50%) comes from 3 different regions :
- 17.5% from the Maury plateau : old vines, very low yield (30hl/ha), harvest by hand, long maceration, very traditional winemaking.
- 17.5 % from Tautavel. Same terroir and winemaking except carbonic maceration for 1/3. Malolactic fermentation in tanks.
6-months aging period in barrels.
- 15% from Puichéric (South of the Minervois area).
Yield : 50hl/ha.
Syrah (40 %) :
- 20 % come from Tautavel, as for Grenache. Same winemaking.
- 20 % come from the Hérault plain. Very modern vinification (fresh oak chips during the fermentation).
Mourvèdre (10%) come from Gruissan (La Clape appellation area) on the schistous soils of the mediterranean coast (the best
soil for this variety).
Hot and sunny climate. 30-year-old vines.
40 hl/ha yield.
Long maceration vinification for 80%, carbonic maceration for 20 %.
Long aging in tanks.
