Nice balance of ripe fruits and freshness with spicy tannins (100% Pinot Noir).

 

Food pairing:  White meat in sauce, cold cut, light cheese…

 

Serving temperature: 17-18°C 

 

Tasting notes:

 

Aromas of ripe raspberry with hints of plum and a touch of toast. 

The palate has a balance of ripe fruit and freshness with an appealing spicy smokiness.

 

Soil:

 

This Pinot Noir comes from clay-limestone terraces on the height of the Aude Valley, between Carcassonne and Narbonne.

The vines are pruned according to the "Cordon de Royat" (trellised) and "Guyot" (trellised) methods. 

Relatively low yields (50 hl/ha).

 

Vinification: 

 

The wine undergoes malolactic fermentation in barrels to add complexity and elegance, and the final assemblage was aged for 10 months, 90% in used barrels and 10% in new oak, all from the same Burgundian barrel.
